How to prepare: Apple pie with roses
To prepare the apple pie with roses, peel one of the 4 apples and cut it into cubes. Transfer the cubes to a bowl with tart water to prevent them from blackening. Thinly slice the three remaining apples – without peeling them – using a mandolin. Immerse them in acidulated water and then steam them for a few minutes. Let them cool. Once cold, arrange the apple slices cut in half on a work surface, overlapping them slightly. You need to form as many strips as the number of flowers you want to make.
Roll the apple slices on themselves, starting with the first one placed on the surface. With this procedure, make 6 roses and keep them aside. Meanwhile, prepare the base of the cake by beating the eggs with the sugar and lemon zest until the mixture is light and fluffy. Add the melted butter and the flour sifted with the baking powder. Work again with the electric whisk to mix all the ingredients well.
When you have obtained a homogeneous and homogeneous mixture, add the apple cut into cubes and mix well.
Pour the mixture thus obtained into a buttered and floured mold 20 cm in diameter. Place the 6 roses you have prepared on the surface, in a circular fashion, and let them sink slightly into the dough.
