The apricot granita it’s a dessert fresh and delicious, ideal to serve in summer as after eating or prepare fresh nibble in the hottest afternoons. For the preparation you will only need apricots, water, sugar and lemon juice: the apricots will be mixed and added to the syrup of water and sugar with the lemon juice. The mixture will be poured into a container and placed in freezer for a few hours, stirring every 30 minutes. In our recipe, we have prepared the apricot granita without ice cream maker, but you can also prepare it with the ice cream maker, which will promote creaming. Here are the steps to get there.
How to prepare an apricot granita
Wash the apricots, cut them in half and remove the pit (1). Cut them into small pieces (2) and pass them through a vegetable mill. Prepare the syrup: heat the water over low heat with the sugar (3) and boil for 5 minutes, mixing well. Once ready, let it cool.
Mix the apricots (4) and add them to the syrup of water and sugar with the filtered lemon juice. Leave to cool in the refrigerator for half an hour. Transfer the mixture to a steel container and place it in the freezer: stir every 30 minutes so that the granita takes on its classic grainy consistency (5). Before serving, blend it or put it in a blender to make it soft. Pour into glasses and serve with a mint leaf or whipped cream. Your apricot granita is ready to be tasted (6).

You can also prepare the apricot granita with the ice cream maker: chill the mixture in the refrigerator for 30 minutes, pour it into the ice cream maker and follow the preparation instructions.
The amount of sugar it can be decreased or increased according to your preferences and the sweetness of the fruit. You can also replace the sugar with fructose, the grape juice or the stevia, low-calorie natural sweetener.
