Making artichoke salad is very simple. Get some fresh artichokes and proceed with cleaning. Prepare a bowl of cold water to which you have added the lemon juice, you will dip the slices of artichokes in once cut, to prevent them from blackening. Eliminate the stems, cut about 3 cm of tips and discard the outer leaves, harder, until you get to the tender ones. Divide the artichoke in two and, with a paring knife, carefully remove all the internal beard. Now proceed to cut the artichoke into thin slices. Dip them gradually into the water.
