To make the cherry and chocolate babka, collect the flour, 70 grams of sugar, yeast, egg plus yolk, milk at room temperature, grated lemon zest and a pinch of cinnamon in the mixer bowl. Start kneading with the whisk at low speed just enough to mix. Assemble the hook and continue to knead adding a piece of very soft butter at a time, waiting for it to be well incorporated before adding more. Continue to knead for at least 15 minutes or in any case until the dough is well strung and appears smooth and elastic, adding the salt only towards the end. Form a ball, place it in a bowl covered with cling film and let it rise until doubled. It will take at least 2-3 hours.

In the meantime, cut the cherries in half (keeping a dozen aside), pit them and put them in a large non-stick pan with the sugar. Cook them over medium heat until soft then turn off the heat and set aside. Let them cool completely. Once the rising time has elapsed, take the dough back and with the help of a rolling pin roll it out on a freshly floured pastry board into a rectangle of about 30×40 cm. Spread the cherry mixture and the chocolate chips on the surface, reaching a couple of cm from the edges.

Roll it all up starting from one long side towards the other so as to obtain a cylinder. With a sharp knife cut it in half lengthwise, leaving one of the two apical parts intact. Roll the two flaps one with the other, making sure that the stuffed part is always upwards. You will get a kind of braid.

Place it inside a 25×13 cm box mold lined with parchment paper, cover with a cloth and let it rise for 1 hour. Bake in a preheated oven at 180 ° for about 40 minutes, covering with aluminum foil if it becomes too brown. Remove the cake from the oven and let it cool slightly before removing it from the mold. Serve the babka with cherries and chocolate warm or at room temperature, sprinkle with icing sugar and decorate, as desired, with the remaining cherries.
