How to prepare: Baked cabbage au gratin


To prepare the grated cabbage in the oven, start to leaf through the savoy cabbage and remove the central rib from the larger leaves, if it is too big and hard. Cut the leaves into small pieces or strips and wash them under running water. Heat a non-stick pan with a drizzle of extra virgin olive oil and brown a clove of garlic, then cook the cabbage for about 15 minutes over medium-high heat, tossing it in a pan so that it doesn’t burn. At the end the cabbage must be cooked, but not flaked. Add salt, stir and turn off the heat.


Transfer the vegetables to a bowl and add half a dose of grated Parmesan cheese, mix and season with a tablespoon of extra virgin olive oil. Spread the cabbage in a well oiled ovenproof dish.


Sprinkle the surface with the remaining grated Parmesan and breadcrumbs and finish with a generous round of extra virgin olive oil. Cook the cabbage in a preheated oven at 200 ° for 25 minutes until a golden crust has formed on the surface.

Remove the grated cabbage from the oven and serve hot.
