First clean the artichokes: remove the hardest leaves, cut the tips and fillet the stems. Cut them in half, remove the internal hay then cut them into thin wedges, place them gradually in a bowl with water acidulated with lemon. In a pan, heat two tablespoons of oil, season the artichoke slices and the chopped stems for a few minutes. At the end add salt and sprinkle with chopped parsley. Keep in mind that the artichokes must have just softened as they will later pass into the oven.


Cut 4 pieces of aluminum foil and arrange them one at a time on the work surface. In the middle of each one, arrange a little artichokes, a little grated ginger, pink pepper, a clove of garlic with the skin and two drops of Worcester sauce. Place a trout fillet on top, add salt, add a drizzle of oil, more pink pepper to taste and then close the foil.
