Banana pancakes are an unusual version of the typical American breakfast pancakes, now appreciated all over the world, especially in brunches. As in the original pancake recipe, the procedure we suggest involves a batter based on flour, eggs, milk and yeast, to which the banana pulp is added. We garnished them with maple syrup, but according to taste they can be accompanied by Nutella or jam.
Banana pancakes are a simple dessert to make and for this reason there are numerous variations: for a quick recipe try the banana pancakes without flour, mixing only eggs and bananas, or the vegan banana pancakes. In this case the banana replaces the eggs and binds the dough, but take care to blend it in a mixer to obtain a creamy consistency, then add the flour.
Banana is a fruit appreciated by athletes as it is rich in potassium and useful both for the cardiovascular system and for the tone of the muscles. This fruit also has a good fiber content and provides the body with vitamins A, B, C and traces of E.

INGREDIANTS For Banana pancake
- 300 g of flour 00
- 2 bananas
- 250 ml milk
- 2 eggs
- 25 g of sugar
- 8 g of baking powder
- 30 g butter
- Maple syrup
HOW TO PREPARE: BANANA PANCAKE

1 – To make banana pancakes: mash the bananas with the help of a fork. In a bowl, sift the flour and add the sugar and baking powder.

2 – In a container with high sides, beat the milk and eggs with a whisk, until you get a frothy mixture. Add the banana pulp and the mixture of flour, sugar and yeast. Mix everything together.

3 – Let the batter rest at room temperature for at least 30 minutes.

Grease a 15 cm diameter pan with butter, pour about 80 g of mixture and cook for 3 minutes on each side over medium heat.

Alternatively, you can cook several pancakes at the same time on a previously heated non-stick pan, turning them gently with a spatula as soon as they begin to darken.

4 – Compose the dish by overlapping the banana pancakes, decorated with cubes of fresh fruit and maple syrup.
