
This basmati rice with vegetables and shrimp it’s a ethnic recipe which comes from Sri Lanka. For a dinner with friends, but also with the family, it is easy to prepare and is ready in less than an hour.

The basmati rice with vegetables and shrimp it’s a ethnic recipe which is found in many Asian cuisines and therefore has different variations depending on the place of origin. The version we present to you is made in Sri Lanka and prepared the lady with us Pyoni Croos Warnakulasooriya, originally from Wennappuwa not far from the capital Colombo, and who has lived in Italy for 15 years.
The mix of vegetables you need to make this happen first course or single dish it is easy to find and can be found all year round: peas, spring onions, green beans And carrots they are stir-fried together with basmati rice and ai shrimp left to flavor in the powder of turmeric. The rice variety used in Sri Lanka is Keeri Samba, which in Italy is not so easy to find and for this reason it can be replaced with basmati, with similar characteristics: tapered and very aromatic grain.
Everything is cooked in the same pan, so that an ideal recipe for a dinner with friends or family is ready in less than an hour. You can choose to make it without eggs and prawns: just sauté garlic and oil with a little curry and turmeric and add the vegetables in the order of the original recipe, for a vegetarian and / or vegan dish.
In Sri Lanka this basmati rice with vegetables and shrimpi get ready for a ‘special occasion, when there are guests to cuddle. The extra touch, in fact, is to serve it with a typical spicy sauce, the Chili Paste, made with garlic, dried shrimp, chilli, soy and ginger pounded together.

How to prepare: Basmati rice with vegetables and prawns


To prepare basmati rice with vegetables, start boiling the rice in lightly salted water. Drain it and transfer it to a bowl to let it cool.


Shell the prawns, remove the black thread, wash and dry them. If they are too big, cut them in half and put them in a bowl with the turmeric and a sprinkle of pepper. Let them flavor while you dedicate yourself to the preparation of the vegetables. Peel and wash the carrots and cut them into julienne strips, cut the green beans into small pieces about half a centimeter and coarsely chop the spring onions.


Pour oil into a large pan (it must also contain the rice) and let the crushed garlic cloves flavor. When the garlic is slightly golden, add the prawns and after 3-4 minutes also the eggs previously beaten with very little pepper.


When the eggs begin to thicken, add the peas. Stir and add the carrots, green beans and a pinch of salt.


Cook for 10-12 minutes, stirring occasionally. Add the spring onion, incorporate it well and after 5 minutes pour the soy sauce. At this point, add the rice and mix all the ingredients well for a few more minutes.

Transfer the basmati rice with vegetables to a large serving dish and serve.
