We tell you what you need to know about this cocktail iconic to serve as aperitif in summer when peaches are in season. A recommendation: the drink, fresh and thirst-quenching, must absolutely be prepared with fresh white peach juice and not as often happens with packaged yellow peach juice, or even worse with flavored vodka.
Follow the step by step recipe to prepare Bellini at home: it only takes you 10 minutes.
If you like, you can blend two or three raspberries and a little sparkling wine with the peaches in order to revive the final color of the cocktail. If desired, if you like, the classic recipe can be sweetened with a little sugar. In reality, the original recipe provides that the peaches are not blended but crushed in a colander to extract the nectar. For convenience, you can, however, blend the fruit at home, taking care to consume the cocktail immediately, alternatively keep the peach nectar in the refrigerator to prevent it from oxidizing.
The Bellini is a very Italian cocktail known all over the world, created by Giuseppe Cipriani, owner of Harry’s Bar in Venice, in 1948 on the occasion of the exhibition dedicated to Giovanni Bellini known as Giambellino.
As tools you need a jigger, hourglass-shaped dispenser used by bartenders, and one plier, useful in the final decoration completed with a slice of white peach.

How to prepare: Bellini


To prepare the Bellini, first of all prepare the white peach puree: wash and peel the fruit, cut it into wedges and put it in an electric blender. For a more intense color you can add two or three raspberries and a little sparkling wine which helps to maintain the color. Blend the ingredients for a few seconds. Pour the peach nectar into a small cup or flute.


At this point, gently add the sparkling wine to fill the glass. Mix from bottom to top to mix the ingredients.


Decorate with a peach wedge with the help of tongs. The Bellini is served.
