To make the berry cheesecake, start from the base. Pulverize the biscuits in the mixer and collect them in a bowl. Mix them with the melted butter until you obtain a homogeneous mixture that you will place on the bottom of a 22 cm diameter springform pan, greased or lined with parchment paper. Compact well with the back of a spoon in order to obtain a homogeneous and well-leveled surface. Place in the refrigerator to settle while you dedicate yourself to the filling.
Soak the gelatine sheets in cold water for the time indicated on the package. In a bowl, mix the cheese with the icing sugar, 180 g of cream and the vanilla seeds extracted from the pod with an electric mixer. You will need to obtain a smooth and homogeneous mixture. Squeeze the gelatine sheets, melt them in a saucepan with the remaining 20 grams of cream and when the mixture is warm, mix it perfectly with the cream cheese.
Add the berries provided for the filling and mix. It doesn’t matter if someone gets squashed during this phase because it will color the compound. Pour everything into the mold on the biscuit base and level. Place in the refrigerator to thicken for at least 4 hours.
