How to prepare: Black Forest Cake
Let’s proceed with the recipe of the black forest cake from the composition of the dessert. In advance you will have made 3 discs of cocoa sponge cake following the basic recipe. First, separate the cherries from their syrup. Keep the latter and add the Kirsch, mix well and set aside. In the bowl of the planetary mixer with the special whisk, or in a common bowl with an electric mixer, whip the cream together with the icing sugar and vanilla seeds. Transfer it to a pastry bag with a 15 mm smooth nozzle.
Arrange the first disc of cocoa sponge cake on a serving plate, completely cold. Brush it with the syrup of sour cherries and Kirsch. Spread a layer of whipped cream and distribute 12-15 sour cherries over it.
Then place the second disc of sponge cake on it, brush it with the syrup, spread the whipped cream and distribute the black cherries, then cover with the third disc. At this point, cover all the cake, surface and sides with cream, then distribute the dark chocolate curls. Transfer the remaining whipped cream into a second pastry bag with a 15 mm star nozzle and proceed to decorate the surface, with many small tufts all around the edge. Place a sour cherry on top of each and keep the black forest cake in the refrigerator until ready to serve.
