How to prepare: Breaded zucchini in the oven
Start preparing the breaded courgettes in the oven by washing the courgettes, dry them, then trim them and cut them into sticks of about 1 cm on each side. Beat the eggs in a bowl with a little salt and pepper. In another bowl, mix the grated Parmesan cheese with the breadcrumbs. Pass the zucchini first in the flour, then in the eggs, finally in the mix of breadcrumbs and Parmesan.
Arrange the breaded courgettes on a baking sheet lined with parchment paper, season with a drizzle of oil and cook in a convection oven heated to 180-200 ° C for 25 minutes until they are cooked and golden.
Remove the courgettes from the oven and serve them hot, lukewarm or at room temperature: the breaded courgettes in the oven will always be crunchy on the outside and soft on the inside.
