the bruschetta with caramelized onions and goat cheese it’s a simple and tasty preparation, which really takes a few minutes. In our recipe we used the Tropea red onions, which are caramelized with a pinch of sugar and a drop of wine vinegar, for a pleasantly sweet and sour undertone, then paired with goat cheese, homemade toast and fresh rosemary. How to make a caramelized onion and goat cheese bruschetta

Peel the onions and cut them into thin slices (1).

Collect them in a saucepan and add the sugar, vinegar and a drizzle of oil (2).

Put on the heat and cook slowly until the onions are well caramelized: this will take about 40 minutes (3). Season with salt and pepper.

Finely chop the rosemary and mix it with the oil. Brush the slices of bread with the prepared emulsion (4) and toast them in the oven for a few minutes.

Once golden, take the slices of bread from the oven and spread them with goat cheese (5).

Distribute over the caramelized onions (6).

Garnish with a few thyme leaves and serve (7).
Advice
Instead of homemade bread, you can also use del Rye bread, complete or with cereals, for an even more rustic result.
If you wish, you can also complete your bruschetta with walnut kernels, toasted pine nuts or flaked almonds; you can also add fresh grapes and replace the goat cheese with another cream cheese spread to your taste, such as robiola or ricotta.
