Ingrediants
- 4 slices of wholemeal bread
- 300 g fresh Norwegian salmon fillet
- 80g unsweetened Greek yogurt
- 6-8 pickled gherkins
- fresh dill to taste
- extra virgin olive oil
- salt
- pepper
Arrange the dill yogurt on the slices of bread, spread the hot salmon, gherkins cut in half horizontally and more fresh dill to taste. Serve immediately.
METHOD
Toast the bread in the oven until golden and crisp. In a bowl, mix the yogurt with a sprig of dill, season with salt and pepper and set aside. Cut the salmon into 2-3 cm cubes, transfer them to a baking dish and season with olive oil, salt and fresh black pepper. Cook in the oven with the grill at maximum power for about 5 minutes.
