- 150 g of cream
- 80 g of sugar
- 35 g of glucose syrup
- 15 g of honey
- 35 g of skimmed milk powder
- 2 g of carob seed flour
- 1 pinch of salt

To prepare the fiordilatte ice cream, start by heating the milk, cream, honey and glucose in a saucepan until it reaches 40 °. Add the sugar, the skimmed milk powder and the carob flour previously mixed. Now bring the mixture to 65 °.


While the mixture is still on the stove, emulsify it with an immersion blender. This step is to prevent the carob seed flour from creating lumps and to combine all the ingredients well. Pour into a bowl and let it cool, first out of the fridge and then in the fridge, for a couple of hours. Now place the mixture in the ice cream maker and let it stir for the necessary time.

Serve your fiordilatte ice cream with fresh seasonal fruit.
