
cabbage salad is widespread in Trentino and South Tyrol. A simple recipe to prepare, appetizing and healthy. In this case we used the variety ‘by heart‘ of the cabbage. An apple from Trentino, a few walnuts and an unusual touch of cumin. balsamic vinegar completes and embellishes everything!

L’cabbage salad it’s a very easy recipe to prepare, but not trivial. Combine different flavors to create a pleasing result: cabbage, Apple, nuts, cumin And PDO balsamic vinegar.
In this case we used del cabbage at heart, or bull’s heart: this definition is understood by observing its shape, but you can also use the more common round one. Cut it fine, this is the secret to a pleasant and tasty salad. We have added one Golden apple that you can cut with a mandolin, as we did, or into chunks if you want to taste more of its consistency.
The other recommendation is balsamic vinegar: we remind you the difference between IGP and DOP balsamic vinegar, it is not a detail but two completely different products. Besides being good this one recipe is healthy and nutritious. Raw vegetables, nuts, cumin, apple, it is difficult to imagine a concentrate of nutritional properties that are equally beneficial for our body!

To prepare the heart-shaped cabbage salad, cut the cabbage in half and slice it finely, even with a slicer if you have it. Stop when you reach the central rib, clear and hard. Wash it, dry it and place it in a bowl or serving dish. Add the apple slices.


Add the coarsely chopped or chopped walnuts, the cumin seeds and season with a drizzle of extra virgin olive oil and salt. Jumbled up. Complete with DOP balsamic vinegar and a sprinkling of pepper.
