How to prepare: Apples in a cage


Start preparing the caged apples from the filling. Coarsely crumble the macaroons in a bowl. Add about 3 tablespoons of apricot jam and mix to obtain a lumpy dough. Set aside. Remove the core taking care not to break the shell and peel the apples. Level the base if necessary so that each apple can stand upright. Heat some jam in a bain-marie, you will need it to brush the apples. Arrange the apples on a baking sheet lined with parchment paper.


Brush them with the jam and then fill each apple with the filling made previously.


Roll out the puff pastry roll having the longest side as a base and with a wheel cut out four rectangles of the same size. Wrap each apple with a rectangle, in order to cover the entire surface, leaving only the upper hole uncovered. Brush with a beaten egg yolk with a little milk and bake in a preheated static oven at 200 ° for about 50 minutes.


Remove from the oven, leave to cool and serve the apples in a cage sprinkling them with powdered sugar.
