How to prepare carrettiera peppers

Wash the peppers, cut them in half and remove the seeds and inner white ribs (1).

Then cut them into quarters and then into regular strips (2).

Transfer the peppers to a large saucepan with 1 clove of sliced garlic, 2 tablespoons of oil, 1/2 teaspoon of salt, vinegar and sugar (3). Cover and cook, stirring occasionally, until the peppers are cooked (they should still remain plump).

While the peppers cook, chop the parsley with the remaining garlic clove (4).

In a pan, toast the breadcrumbs, being careful not to burn them (5).

Collect the toasted breadcrumbs, grated pecorino, and chopped parsley and garlic in a bowl (6).

Transfer the peppers to a plate and sprinkle with the mixture of breadcrumbs, pecorino, garlic and parsley (7). If desired, season with a pinch of pepper.

Top with a drizzle of raw extra virgin olive oil and a few leaves of parsley, then bring to the table and serve (8).
Advice
You can use a breadcrumbs ready to use or, for an even more intense taste, prepare it at home by roughly chopping a few slices of homemade stale bread.
Avoid overcooking the peppers, which must remain beautiful fleshy and pleasantly croquettes.
You can also use other aromatic herbs, such as basil, mint and wild fennel, and replace the pecorino with Parmesan cheese or the Grated parmesan.
