Making the cherry crumble is simple. First of all, dedicate yourself to the crumble: in a bowl, collect the flour 00, the almond flour, the pinch of salt, the brown sugar and the cold butter cubed from the fridge. Work everything with your fingertips until you get a crumbly mixture. Cover with cling film and let it rest in the refrigerator while you dedicate yourself to the rest of the recipe.

In the meantime, wash and dry the cherries, then pit them and place them in a large non-stick pan. Add the vanilla seeds, sugar, water and corn starch. Put on the fire and cook until you get a thickened sauce. Let them cool and place them inside a 26 cm diameter pan well greased. Sprinkle with the crumble crumbs.

Bake in a preheated oven at 180 degrees for 35-40 minutes. Your cherry crumble is ready: to be served warm with a scoop of cream or fiordilatte ice cream.
