Put the flour, salt, extra virgin olive oil and vinegar in the bowl and mix (1). Add cold water and continue stirring until the mixture is smooth (2). Cover it with cling film and let stand for about half an hour. Meanwhile, pit the cherries (3).

Roll out the dough with a rolling pin until you get a fairly thin rectangular sheet. Sprinkle the surface with breadcrumbs, add the pitted cherries, brown sugar and cinnamon. Roll it up with your hands for the long side, close it as if it were a bundle and seal the edges well (4). Arrange the strudel on a baking sheet lined with parchment paper, brush with milk and sprinkle with brown sugar. Bake in a static oven preheated to 180 ° C for 30-35 minutes (5).
