the chicken with zucchini cream it’s a second course delicious and enticing, a way to bring the Chicken breast so original and different from usual. In our preparation, the meat is first grilled, then cut into small pieces and seasoned with a cremina zucchini-based, aromatic and with a delicate taste, characterized by the scent of nutmeg and the fresh final touch of mint. A simple and tasty dish something to wow your guests, also ideal for an impromptu lunch or a light but gourmet dinner: here is how to prepare it to perfection.
How to prepare chicken with zucchini cream
Slice the zucchini, onion and collect everything in a pan with a generous knob of butter (1). Then put on the heat and brown.
Salt and pepper, also add the milk and a grated nutmeg (2).
As soon as the zucchini are cooked and the cooking juices reduced, turn off then transfer everything to a narrow pitcher and mix with a hand blender (3).
Meanwhile, grill the chicken on a hotplate, turning it on both sides (4). Add salt and, when golden, cut it into strips.
Return the cream to the pan, heat it and add the chicken (5). Stir and let dry briefly.
Serve the chicken in a zucchini cream, ending with a pinch of pepper and fresh mint leaves (6).
You can enrich the zucchini cream with your favorite ingredients: other aromatic herbs likechive or the basil, a little of Parmesan cheese Where pecorino cheese for an extra touch of flavor, del Chili cool if you like spicy flavors. For a crispy touch, you can add Pine nuts Where chopped almonds, at the end of the preparation.

You can prepare the cream in advance and cook the chicken just before bringing it to the table: in this case the cream will keep for 2-3 days in the refrigerator. In case you’ve mixed everything up, seal your chicken in an airtight container and refrigerate for 1-2 maximum.
