
THE chickpeas with saffron they are a tasty dish with an easy recipe. A pinch of red pepper and a bay leaf perfume these stewed chickpeas to taste like side or real vegetarian main course.

- 200 g of tomato pulp
- 1 onion
- 1 sachet of saffron
- fresh or dried hot pepper
- 1 bay leaf
- extra virgin olive oil

How to prepare: Saffron chickpeas


To prepare the saffron chickpeas, start boiling the legumes in about 2 liters of water, together with the bay leaf, letting them simmer very slowly for about 1 hour and a half or even two. Drain the chickpeas, remove the bay leaves and set aside about a deciliter of the cooking water. In a pan, heat two or three tablespoons of oil, add the chopped onion and when it has become transparent, add the tomato pulp and hot pepper. Add salt and cook for 5-10 minutes, stirring often.


Dissolve the saffron in the cooking liquid of the chickpeas kept aside, pour it into the sauté, stir and bring to a boil. Then add the chickpeas, adjust the salt and leave to flavor for 5 minutes over medium heat.

Transfer the saffron chickpeas to a serving dish and serve at the table.
