We still have peaches at our farmer’s market, so I couldn’t help but include this one before it disappears, just in case you have some too. I love cooking with seasonal fruits, especially in savory dishes like these because they add such wonderful flavour, color and a healthy natural sweetness, complementing the meat so well.

This Chili Lime Chicken with Glazed Peaches is so simple and easy to make – perfect for an evening out. For the photo, I used chicken breast, but after recreating it, we decided we prefer chicken thighs – the whole dish tastes better, but it’s up to you to decide which is best for you.

The chicken is seasoned and quickly marinated then finished in the oven to cook. While the chicken is roasting, quickly sauté the peaches in a saucepan, with the shallots, a drizzle of honey and a squeeze of lime juice. So fast and easy. Very delicious! Serve it with a warm salad or slaw, or the forbidden black rice from a few days ago.

Ingredients

  • 1 teaspoon
  • 1 teaspoon
  • 1 teaspoon
  • 1/2 teaspoon cayenne pepper or ground chipotle
  • 1 – 2 teaspoons
  • 1 – 1 1/4 lb skinless chicken breast or thigh (I prefer thighs with skin and bones)
  • 2 tablespoons or butter
  • 2 onions, sliced ​​into thin rings (about 1/2 cup )
  • 2 large peaches, cut into 1/2 inch thick slices
  • 2 tablespoons lime juice, more for garnish
  • 1 tablespoon honey

instructions

Preheat the oven to 400 F.

In a small bowl mix the , , and cayenne pepper

Season both sides of the chicken generously. (a good guideline is 1 teaspoon per 1 pound of chicken)

Coat and rub all sides of the chicken with the seasoning mixture.

Heat oil in a skillet over medium to medium-high heat and sear chicken, top side down until golden. (If using a skin-on, get a crispy skin!). Turn and bake 2 minutes then place chicken on foil, or in 400 F oven and let cake guessing finish, about 10 minutes.

To the same skillet, over medium heat add the shallots. Saute stirring frequently until tender, about 3-4 minutes. Add peaches. Saute gently for 2 minutes, turning once it starts to soften and caramelize. Squeeze with a few tablespoons of lime juice and drizzle 1 tablespoon of honey, stirring carefully to keep the peaches intact. Once they are heated through turn off the heat.

Serving: Put the chicken back in the pan with the peaches, squeeze the chicken with the lime and garnish with the cilantro, or place the whole thing on a plate, pouring the flavorful pan juice on top, garnishing last.

Serve with sweet potato shake, ginger or baked sweet potato fries, or forbidden!


Notes

If using a bone-in skin-on thigh, this will take more than 35 minutes.
