How to make chocolate ice cream
Put the whole milk and the cream in a saucepan (1) and cook over low heat until boiling. In a bowl, beat the egg yolks with the sugar, until the mixture is thick and clear (2). Add the mixture to the saucepan with the milk and the cream (3), continuing to mix over low heat to obtain a very fluid cream.
Add the dark chocolate in small pieces (4) and mix continuously until the mixture is free of lumps. Transfer the mixture to a container and let it harden in the refrigerator for at least an hour and a half. After the necessary time, transfer the mixture to the ice cream maker and start it according to the instructions. If you want to make it without an ice cream maker, pour the mixture into a container suitable for the freezer and let it freeze for 3 hours, stirring every 30 minutes.
