How to make clouds of egg whites with ham and zucchini
Wash the zucchini, cut it and grate it with a coarse grater (1).
Squeeze the zucchini well, so as to remove some of its vegetation water (2).
Chop the cooked ham (3).
Beat the egg whites until stiff with a pinch of salt (4).
Add the zucchini, ham (5) and grated cheese.
Salt and pepper and mix well (6).
Using two spoons, form small quenelles (7) and place them in a mold, lined with a sheet of baking paper. Bake at 180 ° C and bake for about 10 minutes, or until lightly browned.
When the surface is lightly golden, take the clouds out of the oven and transfer them to a serving dish; garnish with basil and serve hot (8).
You can whip the egg whites with a hand whisk or, for your convenience, even with the electric whips.
