How To: Coffee Cheesecake Brownies


To make the coffee cheesecake brownies, start melting the chopped chocolate with the cubed butter in a microwave-safe container on high power, stirring the mixture every 30 seconds. Pour it into a bowl and let it cool. Alternatively, you can melt the butter and chocolate in a double boiler. Add espresso, brown sugar and 3 eggs, one at a time, beating with an electric whisk.


Add the sifted flour and mix with a spatula. Add 100 grams of chocolate chips and mix well.


Transfer the mixture to a rectangular 20 x 30 cm mold, buttered and lined with baking paper. Level the surface well using a spatula or the back of a spoon. In a second bowl, whip the cream cheese with the egg and sugar until you obtain a smooth cream without lumps.
