How to prepare: Ice cream sandwich with colorful polka dots

In a large bowl, mix the butter and sugar with an electric whisk until the mixture is white and creamy. Add the egg yolks, one at a time, and, when everything is well blended, add the vanillin. Add the sifted flour with baking powder and salt to the mixture. Mix well until the dough is smooth and soft.

Take a spoonful of dough and knead it with your hands to form a ball, flatten it and place it on a baking sheet lined with baking paper. Repeat the operation until the dough is used up. Bake at 170 degrees for 15 minutes until the biscuits are slightly golden.

Allow the biscuits to cool for a few minutes, then lift them with a spatula and let them cool completely on a wire rack. Fill them with soft ice cream to create small sandwiches, decorate the edges with colored sugared almonds and keep them in the freezer until ready to serve.
