To prepare the carrot soup, peel the carrots, remove the ends, wash them and cut them into slices that are not too thick. Peel and wash the potato and cut it into cubes. Chop the onion and simmer it gently in a saucepan with two tablespoons of oil and the crushed garlic clove.

Add the carrots, potatoes and thyme. Stir and leave to flavor for a few seconds, then cover with the vegetable broth and bring to the boil. Lower the heat and cook in a covered pot for about twenty minutes.

When the vegetables are cooked, reduce them to a smooth and homogeneous cream using a hand blender. If necessary, add more hot broth to adjust its consistency. Salt and pepper.
