To prepare the Earl gray cake, start whipping the soft butter with the sugar using the whisk of the planetary mixer or an electric mixer. When you have obtained a frothy mixture, add the grated lemon zest, and the eggs one at a time, continuing to work until they are amalgamated.


Then add the sifted flour and yeast, the tea and milk alternating them and mix until you get a homogeneous mixture. Also add the coarsely chopped dark chocolate and mix.


Pour the mixture into a 22 cm diameter mold, greased and lined with parchment paper, and level. Bake in a preheated oven at 180 ° for about 30-35 minutes and let the cake cool completely before taking it out of the oven.


Just before serving, prepare the frosting: whip cream and mascarpone, with an electric mixer, together with the sifted sugar and vanilla seeds. You will need to get a foamy mass.
