These falafel green are inspired by the typical Middle Eastern meatballs: we called them “green” because inside they have spring vegetables like peas, Fava beans, baby spinach and why it is one healthy recipe: they are cooked baked and they are not fried.

THE falafel green they are spicy and fragrant meatballs inspired by the typical chickpea falafel. Why did we call them green? How to prepare: Falafel green


Preparing falafel greens is simple. Blanch the beans and peas in boiling salted water for 2-3 minutes, then drain and stop cooking under running cold water. Dry and peel the beans, removing the film that wraps them. Transfer them to the blender jar together with the spreadable fresh cheese, shallot, aromatic herbs, egg, breadcrumbs, baby spinach and flour.


Blend everything until the mixture is not too moist; in this case, add more breadcrumbs to taste. Season with salt and pepper. With your hands formed into small balls the size of a mandarin orange. Flour them lightly before placing them on a baking sheet lined with parchment paper.


Drizzle with oil and bake in a preheated oven at 200 ° for about 25-30 minutes. Remove from the oven and serve the lukewarm falafel, completing with flaked salt to taste.
