the fried zucchini rolls they are delicious and very easy to make. Zucchini, protagonists of the summer, are cut into slices, breaded and then fried in boiling seed oil; once browned, just drain them and stuff them with cooked ham And cheese, then roll them gently on themselves: the heat of the frying will slightly melt the filling constituting these rolls streamers and irresistible. How to prepare fried zucchini rolls

Wash the zucchini and cut them into slices not too thin using a sharp knife (1).

Dip the zucchini in the beaten eggs with a pinch of salt (2).

Drain the zucchini and flour them well on both sides (3).

Heat abundant seed oil in a frying pan, dip the zucchini and fry them until golden (4). Drain them and let them dry on absorbent paper towels.

Stuff the pan-fried zucchini with a slice of cheese and a slice of cooked ham (5).

Gently roll the zucchini on themselves, until you have many rolls (6).

Transfer the rolls to a serving platter and serve hot (7).

To fry perfectly, the advice is to use thepeanut oil: odorless and clear, it is characterized by a smoke point of over 200 ° C and is one of those oils which least alter the taste of food during frying. The optimum temperature is 170-180 ° C (if necessary, equip yourself with a cooking thermometer) and, to prevent it from falling too much, cook a few pieces at a time. The zucchini being golden brown, drain them and let them dry on absorbent paper, avoiding covering them.
To get ieven crispier rolls and tasty, you can pass the zucchini slices in the flour, in the beaten eggs with a pinch of salt, and finally in the breadcrumbs, pressing well to make it stick.
To prevent them from opening, you can also stop the rollers with pretty wooden toothpick. If you want an even more streamlined end effect, spend a few minutes in the ovenjust long enough for the cheese to melt.
For this recipe, we used Tilsiter, a semi-hard Swiss cheese, but you can substitute it with Provolone, smoked cheese or with another spun dough product. Instead of cooked ham, you can add a little believed, speck or a slice of mortadella.
