How to prepare: Frittapizza margherita with spinach


Cook the spinach in a little water for 10-12 minutes. Drain, squeeze and chop. Shell the eggs in a bowl, add the Parmesan cheese, add salt and beat them with a fork. Add the chopped spinach and season with salt.
Line a pan with the wet and squeezed parchment paper before pouring the egg mixture (photo 2). Bake at 180 degrees for 25-30 minutes. The omelette should still be slightly soft in the center.

Remove the omelette from the oven and season it as if it were a pizza with diced tomato and mozzarella. Salt it lightly, put it back in the oven and cook for another 6-7 minutes. Remove from the oven, decorate with well washed basil and serve.
