Gluten-free castagnole are the gluten-free version of carnival maid: fried or baked, these soft balls the size of a chestnut, from which they take their name, are the undisputed protagonists of the Carnival. In this recipe we will see how to prepare them with rice flour.
How to prepare gluten-free castagnole
Break the eggs into a bowl, add the sugar (1), vanilla (2) and mix, beating with a whisk. When the dough is compact, add the yeast and the rice flour in rain (3).
When the ingredients are well mixed, slowly add the milk (4) and rum (5). Knead the dough until it becomes soft and elastic (6).
Heat a lot of seed oil in a pan suitable for frying (7). When the oil is at temperature, take pieces of dough with a teaspoon and fry them for 8/10 minutes until they have reached a golden color (8). Drain the castagnoles and place them in a dish with icing sugar (9).
Advice
In the gluten-free bridesmaid recipe, a smaller amount of sugar is used than in the traditional recipe because the rice flour tastes sweeter than 00 flour. This way the maid will be sweet at the right time.
As an alternative to rice flour, you can use a gluten-free mixture for desserts that you can easily find in the supermarket.
For a perfect frying and a crispy damsel on the outside and soft on the inside, we recommend that you use sunflower oil.
If the dough is too runny, add more rice flour.

Gluten-free damsels can be kept for 1/2 days closed in an airtight box, but it is advisable to consume them immediately. On the other hand, they cannot be frozen after cooking but it is possible to freeze the dough either entirely or in portions.
