The Golden rice is a modern variation of Chinese Cantonese rice: one easy recipe, rapid and tasty. use of saffron recalls the gold color to which vegetables, scallops and a sweet and sour sauce are added. A non-trivial first course for a lunch or one dinner with a special touch.

Golden rice with saffron, scallops and XO sauce is a contemporary variation of the popular Cantonese rice, a stir fried rice popular in Western Chinese restaurants, the classic slightly touristy recipe.
This recipe comes from the Mu Dim Sum restaurant, a Milanese restaurant with contemporary Cantonese Chinese cuisine. Chef Chang Liu has included Chinese New Year on the menu with a wish of good luck.
The recipe that we propose includes the XO sauce. The latter is a condiment worth dwelling on: it is a sweet and sour sauce with seafood, typical of Hong Kong, available in all stores specializing in Chinese gastronomy.
The rice to use is of the Jasmine variety: long-grain, fragrant, suitable for oriental preparations.
The procedure is easy: rice cooked in saffron water, seasoned with vegetables and raw scallops cut into cubes, is sautéed in wok; the hemispherical pot is inevitable in Far Eastern cuisine: food can be, from time to time, sautéed, fried, steamed.
The wok, which you can replace with a deep and wide pan, can be made of iron, aluminum or tin with two sturdy handles. It has two advantages: its shape allows you to use much less oil for frying than a flat pan requires, and it keeps the oil and contents at the same temperature.
The dish is completed with the sauce and shellfish cut into slices and then browned in a pan. A different and new way to combine and present rice and scallops, a precious ingredient with a delicate flavor, which immediately creates an air of celebration.

Preparing the golden rice is simple: cook the rice in boiling salted water flavored with saffron powder, according to the times indicated on the package. In the meantime, think of the scallops: cut 2 into brunoise, that is, into very small cubes and 4 into slices. Put them in two separate bowls and set aside.


Cut the courgettes and carrots into brunoise. Keep aside. Drain the rice al dente, sauté it in a pan or in the wok with the vegetables and the scallops in brunoise.

Season the golden rice with the XO sauce and garnish with the sliced scallops, previously browned in a pan. Serve in a deep plate and enjoy. You can decorate with saffron to taste.
