L’Greek salad it’s a fresh food and colorful, typical of Greek cuisine. It is made with tomatoes, cucumbers, peppers, onions, black olives and cubes of feta cheese, a Hellenic specialty made from sheep’s and goat’s milk. As often happens in traditional recipes, there are many different versions which include adding lettuce, white onion instead of red, green olives or white wine vinegar. You can also complete it with slices of grilled chicken breast, boiled chickpeas, steamed shrimp, plain white yogurt or replace the feta with smoked tofu, for a variant suitable for vegans: in short, wide to the imagination. . If you want to vary the recipe, you can try the chicken version, simply by placing strips of roast or grilled chicken inside the salad and flavoring it with an emulsion based on oil, lemon juice, oregano, salt and pepper; if you want to combine it with fish, we suggest you try it shrimp variant: just add cleaned and blanched shrimp for a few minutes in hot water to the salad prepared according to our recipe. For legume lovers, we suggest the recipe that includes chickpeas instead, putting 200 grams of chickpeas in place of the cucumber and adding a few tablespoons of lemon juice to season the salad; interesting then also the version with yogurt and the boiled potatoes in pieces: to do this, just boil the potatoes and then create a sauce with Greek yogurt, oil, salt, two cucumbers, two minced garlic cloves and a few mint leaves; Finally, the vegan variant, still very useful: to make it, it suffices to replace the normal feta by a vegan feta made from rice milk or by tofu, a cheese made from soy milk.
How to prepare Greek salad

Peel the onion and chop finely. Peel the cucumber and cut it into thin slices, reduce the tomatoes and green peppers into pieces (1).

Cut the feta into cubes of about 1.5 cm (2).

Place the vegetables in a large dish and season with a drizzle of oil (3) and a pinch of salt.

Also add the chopped peppers, pitted black olives and feta cubes (4).

Scented with oregano and basil, add a little more oil (5) and mix gently.
