How to prepare: Grilled squid


The first thing to do to prepare grilled squid is to clean the shellfish, if you haven’t bought them already cleaned. Gently pull the head, so as to also detach the bag with the entrails. Remove the cartilage pen and peel off the skin. Separate the entrails and the eyes from the tentacles, remove the beak, then wash everything well under running water. Score the bag with horizontal cuts.


So dedicate yourself to the preparation of the sauce. Grate the lemon zest and finely chop the parsley. Combine the desalted capers, the peeled and cored garlic, the olives and the anchovies in a bowl. Then blend everything with an immersion blender. Add the lemon zest and parsley to the mix of capers and anchovies. Also add the lemon juice and oil, season with salt and pepper and mix.


Transfer the squid to a bowl and sprinkle with the prepared sauce. Heat a cast iron plate: when it is hot, place the squid on top and cook for 5 minutes, turning them halfway through cooking. The same operation can be done on the hot grill.
