Guacamole Lentil ragout

There guacamole sauce comes from far away, precisely from Mexico and it is said that it even dates back to the era of the Aztecs.

The original guacamole recipe turns out to be composed only of a base of avocado with the addition of lime, spring onions And pepper, but over the years they have been born different variations which include the addition not only of tomatoes, but also of spices such as cumin and coriander: we also used the latter for this version.

Served with tortillas or tapas for a aperitif, the guacamole sauce is combined with particular vegetable dishes, or with toast and poached egg.

Making guacamole sauce is simple. First, open the two avocados in half using a sharp knife. Remove the stone and with a spoon extract the pulp by putting it in a large bowl. With a fork, mash until reduced to an almost creamy mixture.

Add the lime juice, the chilli and the onion finely chopped and finally the chopped coriander. Always work with a fork to mix well. Complete with salt and pepper. The guacamole sauce is ready to serve.
