In a bowl mix the dry ingredients, flour, yeast, sugar and salt. Set aside.

Combine in another bowl the beaten eggs, melted butter and vanilla essence. Incorporate the dry ingredients and, with a whisk, add them to the liquids.

Pour the milk and beat, it is very important not to beat the mixture too much. It is a question of integrating them but it is not necessary to try to eliminate all the lumps. If we beat it too much the pancakes will be too hard.

Preparation in the pancake pan or frying pan

We heat a frying pan (it must be the one we have so that things do not stick, the one for omelets or grilled things).

When it is hot, add a ladle of the pancake mixture, starting to pour it in the center and letting the batter itself redistribute in the pan. It is important that we regulate the temperature up or down during the whole process.

If the dough does not curdle when added to the pan, it will be too cold and if, on the contrary, the bottom part burns before bubbles appear on the top part, it will be too hot.
