How to Make Sandwich Bread at Home

Making homemade bread is a detailed process (be sure to read all the details on the recipe card), but overall it’s a simple recipe. Once you get this, you will make it every week to prepare your lunch for the family.

Here’s a brief overview:

  1. Beat flour and yeast in a stand mixer, then mix with warm water, melted butter and honey.
  2. Once the dough is properly combined, transfer to a large buttered bowl, making sure the dough is fully buttered.
  3. Cover the bowl with plastic wrap, place in a warm place, and let it rise until it’s doubled in size (about 20-30 minutes). *Note: use a BIG bowl so that the bread that has started to rise does not touch the plastic wrap.
  4. After doubled in size, transfer back to the bowl of the stand mixer, and mix with the salt water.
  5. Now transfer the dough to the tin and smooth the surface. Cover with a damp kitchen towel, place in a warm place until it rises to 1/2 inch below the rim of the pan. Then remove the towel, and allow another 5-10 minutes to rise.
  6. Brush the top of the bread with the egg mixture (1 large egg lightly beaten + 1 teaspoon water + a pinch of salt).
  7. Bake the sandwich at 375°F for about 35-45 minutes (internal temperature should read 208-210°F). *Note: If you are using a glass loaf pan, bake at 350°F.
  8. Once the bread is finished baking, turn it over to a wire cooling rack. Brush with melted butter, then let cool completely before slicing.

Ingredients

  • Bread flour
  • Wheat flour
  • Instant Yeast or Quick Rise
  • Warm water

  • Read ALL notes before starting.
  • Spray a rubber spatula with cooking spray. Butter a large mixing bowl and set aside.
  • Spray an 8½x4½-inch loaf pan with cooking spray.
  • Install the stand mixer with the paddle attachment. In the bowl of a mixer, beat together the breadcrumbs, wheat flour and yeast.
  • Add warm water, 3 tablespoons melted butter and honey.
  • Mix on low 1 minute.
  • Increase speed to medium and stir 2 more minutes. Scrape the dough from the bowl and paddle with the prepared spatula and mix 2 more minutes.
  • Transfer the dough to a greased bowl and turn it around until all sides of the dough are buttered. Cover the bowl with plastic wrap and place in a warm place until doubled in size (20-30 minutes).
  • Place the oven rack to the bottom center position and preheat the oven to 375°F.
  • Dissolve the salt in 2 tablespoons of warm water and set aside.
  • When the dough has doubled, transfer the dough to the mixer bowl, and screw the mixer bowl back into the mixer stand. Add the brine mixture, and stir on low speed until the water is combined (about 45 seconds).
  • Increase speed to medium and stir 1 minute, scrubbing the sides of the bowl and paddle if necessary.
  • Transfer the dough to the prepared pan and smooth the surface with a buttered spatula.
  • Cover with a lightly damp kitchen towel and place in a warm place until the dough rises to an inch below the rim of the pan (about 15 minutes).
  • Open the lid and let rise another 5-10 minutes or until the center of the dough is flush with the edges of the pan.
  • Carefully grease the top of the bread (after rising) with the egg mixture.
  • Bake until golden brown and/or internal temperature reaches 208-210 degrees Fahrenheit on an instant-read thermometer, 35-45 minutes.
  • After removing the bread from the oven, carefully turn it over to a wire cooling rack. Turn it over and brush the top and sides with 1 tablespoon melted butter.
  • Cool completely before slicing.
  • Enjoy!

Yield: 1 loaf

*To prevent the bread from going flat when it rises, put the dough in a bowl large enough so it doesn’t touch the plastic wrap.

**If using a glass pan, reduce heat to 350°F.

***Bread is best eaten on a baking day. It will last, at room temperature, for up to two days, if stored in an airtight container or frozen for up to one month.
