Hugo, also called Hugo Spritz, is a fresh, light and easy to make aperitif cocktail based on Prosecco. Here’s how to prepare this thirst-quenching drink with South Tyrolean origins at home with the tips of a professional barman.

We asked Ivan Filippelli, Bar Manager of The Spirit Milano, to prepare the recipe of the Hugo, a simple cocktail to make and very popular, because it is fresh and light.
It is also called Hugo Spritz since it recalls the orange-colored drink known all over the world as a symbol of the aperitif: it is born as a white spritz, in a fresher and more refreshing version. Its history is quite recent: it seems to have been created at the beginning of 2000 by a barman from the province of Bolzano, Roland Gruber, looking for a drink with a sweet and gentle flavor, an alternative to the classic spritz.
Typical of South Tyrol, Hugo can be recognized from afar thanks to the glass decorated with a few leaves of fresh mint and a slice of lime or lemon.
Follow the step by step recipe to prepare Hugo at home: they are enough for you 5 minutes. The ingrediants they are Prosecco, lemon balm syrup (increasingly rare) or elderflower syrup and a little soda.
A Advice: immediately pour the ice into the glass, in this way the Prosecco will keep its sparkling part better.
As tools you need a jigger, hourglass-shaped dispenser used by bartenders, a bar spoon, long-handled spoon useful for mixing and one plier, which will facilitate you in the final decoration.

To prepare Hugo, chill a glass, then pour in the lemon balm syrup and a few ice cubes. If you can’t find lemon balm syrup, which is very rare, replace it with elderberry syrup.
Pour in the Prosecco, then add the soda to the drink.
Add some ice with the help of tongs. Mix carefully and delicately with a bar spoon.
Finish the cocktail with the decoration: a few leaves of fresh mint and a slice of lime.
