Simple and quick to make, it is made from boiled carrots, cooked chickpeas, fresh ginger, honey and extra virgin olive oil, for a delicate end result with a enveloping texture. How to Make Hummus with Carrots and Honey

Prepare the croutons: cut the breads into strips (1) then bake them at 180 ° C for ten minutes, or in any case until they are golden brown. Remove from the oven and set aside.

Peel the carrots, wash them and cut them into slices; Collect them in a saucepan, cover them with water (2) and cook them until they are tender but not crushed; it will take 6-8 minutes.

Drain the carrots, but do not throw out the cooking water which will allow you to adjust the density of the hummus. Use a hand blender to obtain a smooth and homogeneous puree (3).

Salt and add the peeled ginger (4).

Add the well-drained chickpeas (5) then the garlic. Mix again until you obtain a velvety cream; if necessary, add a little cooking water from the carrots.

Transfer the hummus to a bowl and stir in the honey (6).

Drizzle with a drizzle of oil (7) then mix gently.

If you buy organic carrots and very fresh, it will not be necessary to peel them: it suffices to rinse them well under cold running water. For an even more original end result, replace the classic orange carrots with violets.
