Making lemon cookies is pretty simple. Collect 80 grams of soft butter together with the granulated sugar in a bowl and whisk with an electric mixer until creamy. Add the egg, the salt, the grated zest of a lemon and the juice. Operate the mixer again and mix the ingredients.


Then add the sifted flour with the baking powder and mix everything until you get a homogeneous mixture, soft but workable with your hands. Cover with plastic wrap and transfer to the refrigerator for about 30 minutes.


After this time, take small portions of the mixture and with your hands form balls with a size of about 3 cm in diameter. Arrange them, appropriately spaced, on a baking sheet lined with parchment paper. Using a spoon, flatten each ball slightly until you get a disk. Bake the biscuits in a preheated oven at 180 ° for about 10-12 minutes or in any case until lightly browned.
