The cold lemon cream it’s a dessert spoon fresh and regenerating, perfect for the summer season. he does not plan any type of cuisine and is done in just 10 minutes with just 4 ingredients: crème fraîche, Greek yogurt, lemon juice and powdered sugar. A light and tasty dessert, perfect to be offered as at the end of the meal digestive or as nibble refreshing: it will conquer the palates and hearts of your guests, even the most demanding. You can also use it for fill a cake, tiramisu or cheesecake by the glass and, in case you want to substitute for Greek yogurt, you can add mascarpone, ricotta or a creamy cheese spread. How to make cold lemon cream

Collect the crème fraîche in a bowl and whip it vigorously until it is firm with an electric whisk, until obtaining a full-bodied and frothy consistency (1).

Add the Greek yogurt and mix gently with a spatula, with up and down movements, to avoid removing the cream (2).

Squeeze the lemons, to obtain the juice, and grate the zest of one of them with a fine grater. Add everything to the mixture (3) and always mix gently, with movements from bottom to top.

Finally, add the icing sugar (4). Wrap the bowl with cling film and let the cream rest in the refrigerator for about 60 minutes.

Transfer the cold lemon cream to the glasses and serve (5).


If you wish, you can garnish your cold cream with drops of dark chocolate, chopped nuts, berries or lemon slices. You can also accompany it with some cat’s tongue or with the pancake of a cannoli or a crispy cone.

If you do not have an electric mixer, pour all the ingredients into a plastic bottle (empty and dry), then shake vigorously for a few minutes: you will obtain a full-bodied cream.

You can also make one vegetable version cold lemon cream with soy cream and white vegetable yogurt without added sugar.

This cold cream can also be made during Winter, replacing the lemon juice with orange or tangerine juice.
