INGREDIANTS
  • 700 g of green beans
  • 3-4 potatoes
  • 1 onion
  • 3 eggs
  • 80 g of grated Parmesan cheese
  • 1 teaspoon of chopped marjoram
  • extra virgin olive oil
  • of olive
  • 1 knob of butter
  • bread crumbs
  • nutmeg
  • salt

HOW TO PREPARE: LIGURIAN MEATLOAF WITH POTATOES AND GREEN BEANS

1 – Wash the potatoes and boil them in their skins for 35 minutes. Drain them and pass them still hot in the potato masher by letting the pulp fall back into a bowl. Clean the green beans and boil them in salted water for 10-15 minutes, drain, chop and mix with the mashed potatoes.

Peel and chop the onion, brown it gently in 3 tablespoons of water and 3 of oil in a pan for 3-4 minutes, then add it to the mixture of potatoes and green beans together with the marjoram and mix.

2 – Shell the eggs in a bowl, mix them with the Parmesan cheese, season with salt and a sprinkling of nutmeg,

then add them to the vegetables, mixing well until the mixture is smooth.

3 – Turn on the oven at 180 degrees. Grease a baking dish and sprinkle it with breadcrumbs, gently spread the mixture making an even layer of about 2 centimeters. Strip the surface with the tines of a fork, sprinkle with a little breadcrumbs, garnish with a few flakes of butter and bake for 25-30 minutes until the surface is slightly golden.
