Preparing pasta and peas is easy. First shell the peas and collect them in a bowl. You can also use frozen peas. Peel the onion, cut it in half and slice it thinly. Let it simmer in a large saucepan together with the oil and a ladle of boiling water (the one in which you will boil the pasta). When it becomes transparent, add the peas, salt and pepper and add another ladle of water. Cook for about 10 minutes.

In the meantime, boil the pasta halfway through cooking, drain it with a slotted spoon and transfer it to the saucepan with the peas. From this moment on, continue cooking by re-cooking the pasta, adding a ladle of hot cooking water at a time when the previous one has been absorbed. Turn off, add the grated Parmesan cheese and mix. Transfer pasta and peas to serving plates and serve immediately.
