- 1 slice of tuna of about 300 g
- 5 squeezed oranges
- 1 medium-sized whole yellow onion
- 1 tablespoon of honey
- poppy seeds
- white sesame seeds
- smoked salt
- black pepper
- chives (for garnish)
- extra virgin olive oil

At this point, drain the tuna slice, bread it in poppy and sesame seeds mixed together and brown in a pan greased with a drop of oil for about 2 minutes per side (no more, because otherwise the tuna will be stringy). Season with the smoked salt and pepper.
Cut the tuna into slices that are not too thin and place it on top of the caramelized onions. Once served, season with salt and garnish with two strands of chives and grated orange zest.
METHOD
Start by marinating the tuna slice in the juice of 4 oranges for about 15-20 minutes. In the meantime, prepare the caramelized onion, chopping it fairly finely and browning it over low heat in the olive oil. When it is almost transparent, add the juice and pulp of an orange little by little. Once the juice has been reduced, add salt, pepper, a spoonful of honey and finish cooking, being very careful not to let the onion burn, as it risks becoming bitter.
