The marzipan recipe is easy to make, and can be used in the kitchen for many preparations. It is a simple dough based on almond flour and sugar that is used to create biscuits, sweets, fillings and cake decorations and the beautiful (and very good) Sicilian martorana fruit. If necessary, marzipan can be flavored and colored but also molded into different shapes, such as the little man, the little house or the famous Easter lamb, the ‘sheep’ of the Calabrian and Sicilian culinary tradition. But let’s see how to prepare this basic dough and how to use it in the kitchen
Ingrediants
- Almond flour or whole almonds 125 gr
- Powdered sugar 125 gr
- Egg white 1
- Almond essence A few drops
- Food coloring to taste
Preparation
-
Almond flour can be bought as it is in stores but you can also use whole almonds. After having peeled them, remove the skin and chop them very finely, until you get a real flour that is very fine to the touch.
-
To prevent almonds from losing liquids in the form of oil while you chop them, we recommend that you put them in the freezer for 15 minutes before using them.
-
In a bowl, mix the almond flour, the icing sugar, the lightly beaten egg white and the almond essence. Stir with a wooden spoon and then knead with your hands.
-
Work well until you get a smooth and soft dough. To the touch you must not feel even tiny pieces or lumps, because otherwise the marzipan will tend to break.
-
If the dough is too soft, add a teaspoon of powdered sugar. When the marzipan is ready you can use it for your preparations.
-
For example, you can create biscuits, men, houses, sweets or cover cakes. Continuing the reading, we will explain how to do it.
