The meatloaf in a crust is a second dish of meat that is simple in its preparation, tasty and spectacular. It is a meatloaf dressed up in practice that I made even tastier by adding a filling of Asiago cheese and champignon mushrooms.
Ideal for the table in a day of celebration, this meatloaf crust will take to tempt your guests, or at least, when I have brought to the table, it happened just like that;)
I told you that today’s recipe is nice light, but it is definitely worth trying.
Ingedients of Meatloaf In a Crust
For the meatloaf
- 400 gr of minced beef
- 400 gr of minced pork
- 2 eggs
- 4 slices of bread
- 50 gr of Parmesan cheese
- salt
- pepper
- Rosemary
- For the stuffing
- 500 gr of champignon mushrooms
- 1 clove of garlic
- extra virgin olive oil
- 250 gr of asiago
For the coating
- 200 gr of bacon
- 1 roll of puff pastry
- milk for brushing
How to make meatloaf in a crust
In a bowl put minced beef and pork, the previously softened bread in a bowl with water, salt, parmesan, eggs and chopped rosemary. Mix all the ingredients until you get a homogeneous mixture.

Clean and cut the mushrooms into slices.
Sauté them by cooking them in a pan with a drizzle of oil, garlic, parsley and salt. Once cooked, remove the garlic and let it cool.

Roll out the minced meat mixture on parchment paper.
Add to the center of the strips of asiago and then the mushrooms.

Bring both sides of the meatloaf inwards, compact and wrap with the slices of bacon.

Unroll the puff pastry and wrap the meatloaf inside.

Transfer everything to a loaf pan and brush with a little milk.
Cover with the remaining parchment paper and bake at 180 ° C in the oven for 1 hour.

Once cooked, let it cool, then your meatloaf in crust is ready to be served.
