Meatloaf is an excellent baked solution for a tasty and easy-to-prepare second course: a perfect idea suitable for the whole family to serve at dinner.
We used a mixed minced meat (beef and pork), combined with the bread softened in milk, and we made the dough really tasty by adding grated Parmesan and chopped mortadella.
To top it all off and make this dish really tasty: pancetta!
The slices arranged on the surface wrap the meatloaf and create a truly irresistible crunchy crust when cooked.

800 g of mixed minced meat (bovine-pork)
120 g of stale bread
300 g of milk
2 eggs
200 g of mortadella
100 g of grated Parmesan cheese
q.s. nutmeg
q.s. salt and pepper

HOW TO COOK Meatloaf Step By Step

The first step is to cut the stale bread into small pieces (possibly eliminating the hardest parts of the crust) and then wet it with milk. [1]Let’s squeeze it and chop it with our hands in a large container.

Chop the mortadella in a mixer, or alternatively with a crescent, and add it to the bread. [2]


Add the grated Parmesan cheese [3] and season with salt, pepper and a pinch of nutmeg [4].
So let’s start mixing.


Now let’s add the minced meat, we have opted for a mixture of minced beef and pork [5], and finally the eggs [6].


Mix all the ingredients working the mixture with your hands [7].
Let’s transfer it to a sheet of baking paper and try to give it a regular shape [8].
Place the sliced pancetta on the surface, completely covering the meatloaf [9].


Finally, let’s transfer it, with the help of baking paper, in a loaf pan (if you have one of adequate size) or in a baking dish.
We bake in a preheated oven at 180 ° for 50-55 minutes if in ventilated mode or for 55-60 if the oven is static [10].

When cooked, serve the meatloaf with excellent baked potatoes or mixed salad.
