To prepare the plum jam, clean the plums, cut them in half and pit them. Collect them in a saucepan with the lemon juice. Bring to a boil and cook for 4-5 minutes. Then add the sugar and the lemon zest that you have taken with a potato peeler. Place on the heat and stir until the sugar has dissolved. Cook the jam for about 40-50 minutes, turning from time to time and removing the foam that has formed on the surface with a skimmer. If you like a fairly fine jam, blend it partially using an immersion blender. Check the cooking with a saucer that you have placed in the freezer. Tilt it and, if the drops do not run, the jam is ready and the gelation has occurred correctly.

Pour the boiling jam into 4 sterilized and well dried glass jars, close with the relative lids and turn them upside down until the following day. With the heat of the jam the vacuum will be created, which will allow you to keep the product for a long time.
